Starting materials are organic acids, not sodium salts. The reported concentrations are based on the anion parts of the acids. For instance, the 1,000 ppm butyrate is made from butyric acid, but we report the concentration on butyrate, which is the molecule of butyric acid, minus a hydrogen atom.
